docs(self-hosting): document configurable embeddings for Supermemory local 
Add a public Embeddings page covering the local default, optional first-boot
picker, full env table, multilingual guidance, remote providers (OpenAI /
Gemini / Ollama), and the re-ingestion / dimension-lock warning. Wire it into
nav, configuration, quickstart, overview, and the README.
