docs: permanent redirects for /self-hosting and /supermemory-mcp

Both paths have no page of their own and were answered with a temporary (307) redirect to the first page of their
section. A temporary redirect tells search engines and AI crawlers to keep the old URL; a permanent one moves them to
the real page, like the other moved paths in this file.

- /self-hosting -> /self-hosting/overview
- /supermemory-mcp -> /supermemory-mcp/mcp
