* feat(helm): split per-component ServiceAccounts for gateway, backend, and UI Replace the single shared serviceAccount with three separate serviceAccounts (gateway, backend, ui) so operators can attach different IRSA / Workload Identity annotations per component without granting data-plane credentials to the UI pod.
