docs(router): add a docs/architecture section for the router 
Diataxis pages (tutorial, how-to, reference, explanation) with Mermaid
diagrams. They describe the router once the core swap is finished: the
Python Router facade over the Rust litellm-router-core, PythonHost and
NativeHost, static settings changed only through apply(), and the Python
core, DeprecatedRouterMembers and router_utils deleted.
