Add Rubrik env vars to config_settings reference

Browse source 
Fixes documentation validation by adding RUBRIK_API_KEY,
RUBRIK_BATCH_SIZE, RUBRIK_SAMPLING_RATE, and RUBRIK_WEBHOOK_URL
to the environment settings reference table.
