ci(codecov): stop carrying forward the roi-postgres and redis-compat flags

Their carried-forward sessions were measured against older proxy_cli.py revisions (633 and 689 line maps against 710 today) and mark docstring lines of the merged file as missed, which failed codecov/patch on this PR at 70% while every unit shard reports the lines hit
