fix: ASCII-only AMI description (AWS rejects em-dash)

Browse source 
EC2 `ModifyImageAttribute` rejects "Character sets beyond ASCII are not
supported" when registering the AMI description. The whole AMI rolls back
on this error. Replace em-dash with hyphen.
