ci: run analytics_endpoints unit tests in proxy-endpoints shard

Browse source 
The new tests/test_litellm/proxy/analytics_endpoints directory was not
assigned to any semantic test shard, so its regression tests never ran in
CI and the endpoint's new lines showed as uncovered. Add it to the
proxy-endpoints shard.
