docs(guardrails): use gpt-4o-mini in xecguard examples

The XecGuard guardrails docs use "model": "gpt-4" in four cURL
examples. Copy-paste from a docs page is the most common way new
users start a proxy session, and gpt-4 is ~10x the price of
gpt-4o-mini for tasks (prompt-injection probing, simple Q&A) that
gpt-4o-mini handles fine.

Swap the four cURL examples to gpt-4o-mini. No semantic change to
the guardrail behavior demonstrated. Output JSON example also
updated for consistency.
