refactor(tests): mirror vm_providers move — test_ec2_provider_real.py

Tests follow 1:1 mapping convention from tests/test_litellm/readme.md:
litellm/foo/bar.py → tests/test_litellm/foo/test_bar.py.

Tracks LIT-2879.
