feat(ui): vector_store_management/S3VectorsConfig Input to shadcn

Browse source 
- antd Input \u2192 shadcn Input (dropped size='large' props, not
  supported on shadcn Input). antd Form/Form.Item/Select kept
  (validateStatus + showSearch + filterOption).

Gates: TS \u2713 | Build \u2713.
