fix(ci): Fix mypy type errors across 6 files

- transformation.py: Use Reasoning().model_dump() for dict param, setattr for dynamic attr
- gemini/transformation.py: Use dict type ignore for TypedDict dynamic key access
- endpoints.py: type ignore for dynamic hook attribute
- pass_through_endpoints.py: Fix Optional[dict] type for custom_body
- server.py: Cast MutableMapping scope to dict
- zscaler_ai_guard.py: Assert api_base is not None (always set via env default)
