docs: update SOC 2 Type II status to in progress, expected Q3 2026

Browse source 
- Update Security Certifications table in data_security.md
- Update Legal/Compliance FAQs in data_security.md (also fixes stale April 2025 date)
- Update enterprise.md benefits section to reflect accurate certification status
