fix: handle escaped newlines in todo list parsing for native tool calling

- Added normalization of escaped newlines (\n) to actual newlines in parseMarkdownChecklist
- This fixes an issue where Minimax M2 model via RooCloud with native tool calling
  was sending todo lists with literal \n escape sequences instead of newlines
- Added comprehensive tests for escaped newline handling
